We also ran into this problem in Modern when we tried to build around Swarmyard and found literally zero legal Squirrels in the format. When I sat down to build a Squirrel deck, one big problem came up: there just aren't many Squirrels in Magic. It is interesting to note your opponent can choose target the squirrel token before the ability of Eldrazi Monument is resolved, for instance by giving it -1/-1 and thereby killing your squirrel token and leaving you without creature to sacrifice to the triggered ability from Eldrazi Monument. After the ability of Earthcraft is resolved, you have a squirrel token and once again first you and then your opponent have priority. This activated ability is put on the stack as well, and once again you and your opponent gain priority. You can now active the ability of the permanent enchanted with Earthcraft. As is customary when something is put on the stack, you gain priority. If you can’t, sacrifice Eldrazi Monument”. The triggered ability put on the stack reads “Sacrifice a creature. With Eldrazi Monument in play, a triggered ability from Eldrazi Monument is put unto the stack before either player has been given priority.
